James Villas the Glory of Southern Cooking and Maybe Some Fried Rabbit?

I received a Barnes and Noble gift card for Christmas and because I am a book lover and Southern girl that loves to cook, what do you think I purchased?  Why, of course, a Southern Cookbook and I chose James Villas, the Glory of Southern Cooking.  It is a wonderful cookbook with all of those wonderful Southern favorites and it also includes wonderful introductions and stories about each selected recipe. James Villas was the food and wine editor of Town & Country magazine for twenty-seven years.  He is the author of eighteen cookbooks and best of all, he was born and raised in the wonderful state of North Carolina.

As far as I am concerned this book could be called the Southern Bible cookbook as it includes equipment, ingredients, special cooking techniques and a glossary of Southern cooking terms. There are many recipes in the book that stir such sweet memories for me of my Southern upbringing and at the same time, I am inspired by many recipes that are from other areas of the South that I have never made. Mr. D is a little apprehensive about me trying the original Bananas Foster recipe as it includes a flaming sauce. Maybe I will wait until summertime to create that one.

Today, I am sharing a recipe from the book entitled Fried Rabbit with Madeira Gravy. Many times Mr. D has talked about how his Daddy, Wilder would prepare fried rabbit with gravy and how much he would love to be able to eat it again.

I will start looking for the frozen dressed rabbits in our local grocery stores just to see if they are available.  Wouldn’t that be a great surprise?  We do have a Jack Rabbit that visits our backyard in the Spring and I am thankful that Mr. D isn’t a hunter and Jack has a safe home.
