In October I blogged about having two friends over from my workplace and celebrating our birthdays together. I served Sun Dried Tomato Dip that I made from a packet I purchased at Harry & David’s. My friends, Alithia and Meisha, never stopped talking about that dip and wanted to know where they could buy it. I told them how I made it and that it came from Harry and David’s. As a surprise for them, I decided to make it for them as a Christmas gift. I googled Sun Dried Tomato Dip and to my amazement I saw a recipe by Ina Garten. As she is one of my favorites, I knew I could not go wrong using her recipe. I prepared it for Alithia and Meisha and they were extremely pleased. I do believe Ina’s recipe was very close to the Harry & David’s version and if you prepare it, you can determine how much heat you want in your recipe from the hot red pepper sauce. My version was very mild.

Sun-dried Tomato Dip

Total Time: 10 min Prep:10 min Yield:2 cups Level:Easy
1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 scallions, thinly sliced (white and green parts)
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade. Add the scallions and pulse twice. Serve at room temperature

Alithia and Meisha were very pleased with the dip and I had told them that I planned to make it for them. I also told them if I didn’t think it turned out successfully I wouldn’t bring it to them. Meisha told me to bring it any way because they would enjoy eating it no matter what. Now do you see why I love to prepare food for two of my special work friends?
