Fresh Sweet Corn – Again

We had our first fresh corn of the season yesterday.  I always look forward to the first fresh corn of the season. We purchased our corn from our local farmers market and it had already been shucked.  That was definitely a time saver and I was able to see the quality of the corn before I purchased it.   I have made my corn in the microwave for years and not disappointed with the results.

I browsed through my recipe books and finally decided to share the way I prepare fresh corn.  Even though I have posted this before, I thought it was a quick easy recipe for a Monday.  Don’t we always appreciate “easy” on Monday.  Here is a picture of my corn and we purchased the multi variety.

This is the way I prepared our corn.

Fresh Sweet Corn

You will need:

2 cups of fresh corn removed from about approximately 4 ears of corn  (This can be the white corn or yellow corn)

1/2 cup of water

3 tablespoons margarine

1/2 teaspoon salt

1/4 teaspoon pepper

I place the corn in a microwavable bowl and add:

1/2 cup of water

I microwave the corn on high for about 8 minutes.

I then remove the corn from the microwave and add:  3 tablespoons of butter or margarine, salt to taste (about 1/2 teaspoon) and black pepper to taste (about 1/4 teaspoon)

You can also make this on top of the stove in an iron skillet but I love to make it in the microwave as it doesn’t get tough from being cooked to long and it retains it’s flavor so well. The corn is creamy and absolutely delicious.
