Pie Versus Cake – Really? – It Should Be Sweet Potato

Being a sweet freak, I love both pies and cake. I usually bake one or the other depending on the occasion.  I know some Southern cooks bake a cake every week. I also know Southern cooks that make some type of pie that is so delicious that it is the best option for any occasion.  My Mother baked sweet potato pies for people after she retired from work and they were good.  Sadly, I do not have her recipe.

I was cleaning off my desk the other day and the recipe I am sharing with you today fell out of a folder.  It was given to me by my friend Dixie and it is a recipe that a dear lady in our church, Rocky prepared.  So I think this is just a gift from Rocky and a way of saying that if you have a sweet potato pound cake, you don’t need anything else.

Sweet Potato Pound Cake

1 cup butter

2 cups sugar

4 eggs

3 cups mashed sweet potatoes

3 cups sifted flour

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon soda

1 teaspoon vanilla

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup chopped nuts

1/2 cup coconut

Cream butter thoroughly, add sugar, gradually, beating well.  Add eggs one at a time, beating after each addition.  Add mashed sweet potatoes and vanilla.

Blend in flour which has been sifted with dry ingredients; fold in nuts and coconut.

Bake ina tube pan lined with waxed paper at 35o degrees for one hour or until the cake tests done.  This cake may be served with whipped cream.  I think this would be absolutely delicious with a cream cheese frosting and would really compete very well with a carrot cake.

As the sweet potato is the official vegetable of North Carolina, I think this would be the perfect North Carolina dessert. So my vote would go for a sweet potato anything.
