I am truly a Southern girl through and through. I love living in the state of North Carolina but I am always open to new ideas about cooking. I started watching Ina Garten when I had carpal tunnel surgery and happened to catch one of her Barefoot Contessa shows on the Food Channel. She appealed to me because of her simplicity in preparing food. She uses lots of fresh ingredients and when I prepare one of her dishes, I feel as if I went to a restaurant and was treated to a wonderful meal.
I own four of Ina’s cookbooks and I have made many of her recipes. Next week, I will share recipes I have made that would be good for Valentine’s Day but I am a sweet freak and thought I would start with dessert. I have made this baked chocolate pudding and it is so good. As Ina mentions in the preparation, bake for one hour and the center will appear under-baked but that is what gives the dessert a consistency between a brownie and a pudding.
This is so good warm and topped with vanilla ice cream. It has a rich chocolate taste and is sweet but not overpowering. It can be prepared ahead of time if necessary.
I treasure my cookbooks written by southerners and especially the local cookbooks that were prepared by grass roots cooks of the South. For special occasions, I go to Ina because I trust that first of all, I don’t need special skills or training to prepare the recipes. Second, I know that any of her recipes have been tested over and over and they will be extra special for me and the people I share them with.
