Stew Beef With Green Peppers and Onions – Nothing Else To Say!!!

Last week was a stressful week for me and my husband.  He was dealing with the cable company and I was dealing with doctor appointments.  Then we had car trouble and I will talk more about that later in the week. To add to my frustration, our sweet little children at the daycare just didn’t seem to have a good week and I think it was just because it was the first full week of attending after the holidays.  When I feel like things are just spiraling out of control, one way that I relieve that stress is to cook.  There is something comforting about putting ingredients together and having it transform into something wonderful to eat.

On Sunday I realized I had lots of green pepper on hand and instead of doing some type of stir fry I remembered a sandwich that I would eat at a local pub, McGuire’s and it was stewed beef on a hoagie with peppers and onions.  The hoagie itself was large and they always topped it with either mozzarella or provolone cheese. My selection as the side dish was always their fried potatoes that were perfectly crisp and not greasy at all.

I decided that I could make this type of combination with the stew beef I had on hand and instead of using a hoagie I decided to put the combination on mashed potatoes.  We enjoyed this comforting winter time dish so much and it reminded me so much of my meal at the McGuire’s.

Here is the recipe:

Stew Beef With Green Peppers and Onions (served on mashed potatoes)    Four Servings

two pounds of quality stew beef cut into small cubes

two cups of prepared mashed potatoes

olive oil  (approximately 3 tablespoons)

2 large green peppers

2 large onions

1/4 to 1/2 cup of water

3 cloves of garlic, chopped

salt and pepper

beef broth – one cup

8 thin slices of provolone cheese

2 cups of prepared mashed potatoes

Place the stew beef in crockpot.  Add 1 cup of beef broth.  Season with one teaspoon of salt and one half teaspoon of black pepper. Cook on high for four hours or until tender.  The meat will render a delicious rich broth.

When stew beef is done turn crockpot to warm.

Slice the peppers and green peppers.

Place olive oil in saucepan and heat on medium on stovetop.  Add onion and cook until translucent and starting to brown.  Add the garlic and cook for two minutes.

Reduce the heat to low and add the peppers.  Stir to blend with other ingredients.  Add 1/4 to 1/2 cup of water.  Cover and cook on low for 5 to 10 minutes or desired tenderness.

Divide the potatoes and place on plates with an indention in middle of the potatoes.  Add the stew beef and broth.  Top with the onion and pepper mixture.  Add the provolone cheese.

Stew beef, potatoes, onions, peppers and cheese, YUM!!  What a great way to start the week.   I am confident this week will be a better one for our family and I hope you enjoy your week too.  Thanks for stopping by.
