On This First Day of The New Year Let’s Have Some Lasagna

Happy New Year to you on this first day of 2014!  We had homemade lasagna to celebrate New Year’s Eve and I had not made it in a long time and it was so good.  I know that with the New Year people will make lots of resolutions and set goals as far as health and fitness is concerned.  I have tried through the years to use a balanced approach to my diet and I try to eat healthy and stay active.  However, I still enjoy special meals and special times sharing those meals with my friends and family.

The recipe I am sharing with you today is for a traditional lasagna recipe that I clipped from a magazine or newspaper many years ago.  It freezes very well and I like having some stashed away in the freezer for one of those days when I just don’t have time to cook. It does take a long time for the sauce to simmer but it is worth the effort and the aroma makes your home smell so warm and inviting.  The only thing I did different in preparing this was use the whole grain lasagna noodles and we honestly could not tell the difference.  Now even though I will have another meal of this lasagna, you can bet that I will be having black eyed peas, collards and corn bread tonight.  I have been preparing that meal for January 1st for over 40 years and it is a long standing Southern tradition that I enjoy.

I hope you enjoy this meal because it is such a great comfort food on a cold winter’s day.  I quit making New Year’s Resolutions a few years ago but I will say that I do have a few goals in mind.  I will share with you new recipes and old recipes that have been prepared in the South over the years.  Personally, I am going to learn to slow down a little bit.  My husband even told me today that I have so much energy it amazes him.  I will continue to make my “to do” lists but maybe shorten them a little.  Hope your 2014 is your very best and I look forward to sharing special times, special places and special Southern traditions with you in the coming year.  I saw the following post on a friend’s Facebook page today and wanted to share it with you.  I think it is a perfect thought and resolution for the New Year.

  1. A perfect post for the New Year with a good recipe and a lovely quote. We always start the year with black-eyed peas as well. I keep forgetting to tell you that I like the new look of your blog. :)

    • Thanks for the compliment about my blog. It is good to know you are keeping the tradition of black-eyed peas on New Year’s Day. I posted that quote so I would remember it as I can be SO HARD ON ME sometimes. I always appreciate your comments.
