The Day After Halloween – Let’s Have some Cheddar Baked Potato Slices

Is there anything better than potatoes with cheese.  I can’t think of anything unless it is something sweet.I am a total sugar freak and I sometimes think I would never get sick of eating anything with a sweet taste.  However, the day after Halloween, I always feel as if I should have something warm and comforting to eat.  Everywhere I have ever worked there has been treats on Halloween.  Being a sugar addict, I have never been able to eat a small amount of almost anything with sugar.  I buy trick or treat candy that I don’t like so I will not be tempted to eat it before the big day.  So on this day after Halloween, I thought it would be a good time to think of warm and comforting dishes.

In the South growing up, potatoes were staples in our house. It seems we had them with our meals lots of times.  However, even though rice is and has been well know as a side dish in the South, it wasn’t served as often in my home. I have always enjoyed potatoes and they have certainly stretched my food budget and given me great meals for our family.  I have made the recipe I am sharing with you today and it would be a great side dish for any meal.  Sadly, my husband has problems with his sugar level if he eats white potatoes so we have been eating more sweet potatoes lately.  I am not complaining because sweet potatoes has to be one of my most favorite vegetables.  I think yams or sweet potatoes can be very versatile and economical too. I think I clipped this recipe from a magazine in the 80’s. The canned soups were a lifesaver for me on many occasions when I was a young inexperienced cook.

Cheddar Bakes Potato Slices

1 can cream of mushroom soup

1/2 tsp paprika

1/2 tsp pepper

4 medium baking potatoes cut into 1/4 inch slices  (about 4 cups)

l cup of shredded cheddar cheese

In a small bowl combine the soup, paprika and pepper

In a two quart oblong baking dish, arrange the potatoes in overlapping rows ( I used a 9 x 13 inch pan)

Sprinkle with cheese.  Spoon soup mixture over the cheese

Cover with foil and bake at 400 degrees for 45 minutes.  Uncover the dish and bake 10 additional minutes or until potatoes are fork tender.  Makes six servings

Is there anything better than baked potatoes with cheddar cheese?  A little bacon or sour cream as a garnish would be a great addition to this casserole and it would make a great main dish meal..
