Let’s Start The Week With Stewed Apples

apples and apple bread 007Last Monday, Labor Day here in the US, I decided I wanted to visit an Apple Orchard in the nearby town of Taylorsville. If I can think of one symbol for the month of September it would be apples. I grew up in the sandhills of North Carolina and peaches was the big deal there. In western North Carolina, apples are very popular. The apples grown here are usually sweet or tart and crisp. I always purchase more apples than my husband and I can eat so there is only one thing left to do and that is to incorporate them in recipes.

On Monday, I decided to make stewed apples. I have made them many, many times and they are easy to prepare and to adapt for my husband’s diabetes. The hardest part is peeling the apples.

Stewed Apples

Two Pounds of Apples  (My favorite is Golden Delicious) Peeled

After peeling the apples and cutting them into slices:

I placed a saucepan on the stove and added

1/4 cup of water and

2 tablespoons of lemon juice

I turned the burner on to medium heat and added the apples.  I stirred them constantly for about five minutes. I then turned the burner down to simmer and added

1 tablespoon of cinnamon

2 tablespoons of butter

1/2 cup of truvia

I let them simmer for about 10 minutes

The apples were tasty and the lemon juice made them more flavorful.  These apples are so good by themselves but they are especially good when combined with vanilla ice cream.
