Cole Slaw – My Way

When I posted a recipe for cole slaw earlier in the week, I started to think about the many different ways to make cole slaw.  In September of 2011, I wrote a post about how I made cole slaw and I am repeating the recipe below.  I know it is a dish that is really popular in the South.  There are vinegar slaws that do not have any mayonnaise in them and they are good but I don’t want that kind of cole slaw on my burger or hot dog.  Yes, in my part of the country we do put cole slaw on our burgers or hot dogs.  That is called a Carolina burger here in North Carolina for a very obvious reason.

I think I learned how to make cole slaw from my daddy.  He was the cole slaw maker in our home when we were growing up and I did like it.  He added sweet pickle to his slaw and I do not include it in mine, however,  it would blend well with the following recipe. I think the great thing about making cole slaw is there is not an exact wrong or right way to prepare it.  You can adjust the mixture to your own particular taste. That is how I have developed the recipe below and we do enjoy it even though we don’t like a very creamy cole slaw.

Cole Slaw

2 cups of chopped cabbage  ( I use the food processor to chop my cabbage but I do a rough chop as I don’t want it pulverized)

1/2 cup of chopped onion ( I also chop this in the food processor and I always remove the inner core of the onion before chopping as it keeps the onion from tasting so strong)

1/2 cup of Duke’s mayonnaise

2 tablespoons of cider vinegar

2 tablespoons of evaporated milk

1/2 teaspoon salt

1/2 teaspoon pepper

After chopping the cabbage and onion, I mix it together in a bowl.  I add the mayonnaise, vinegar and evaporated milk.  After blending all together, I add salt and pepper.  After mixing all ingredients together, I do a taste test to see if I need to make any adjustments.

I hope you will give this a try sometime this summer when you are grilling.  It also goes well with fried chicken, fish and especially barbecue dishes.  Happy Friday Everyone
