Fresh Tomatoes Are Here – Let’s Have A Tomato Blue Cheese Salad

father's day pictures 042Yesterday was Father’s Day in the US.  My husband decided he wanted to grill steaks on our old-fashioned charcoal grill and I decided that I wanted to make a special side salad for the occasion.  As tomatoes are just appearing in our local farmers market and at my favorite produce stand, I decided to make a tomato salad and then I discovered the blue cheese in the refrigerator and decided it would be great with the tomatoes.

Here is the Tomato Blue Cheese Salad Recipe   Makes Two Servings

2 medium size tomatoes

one and one half tablespoons of good balsamic vinegar

two teaspoons of good olive oil

1/2 cup of blue cheese crumbled

Romaine torn into small pieces

salt and paper to taste

Wash the romaine and let it dry on paper towels.  Wash the tomatoes and slice them into thick slices.  Place in a shallow plastic container.

Mix the balsamic vinegar with the olive oil with a whisk in a small bowl.  Drizzle the mixture over the tomatoes and let marinate in the refrigerator for about 30 minutes.

Arrange the romaine on two salad plates.  Add the tomato slices to the plates.  Pour any remaining balsamic mixture over the tomatoes.  Sprinkle the blue cheese over the tomatoes.  Add salt and pepper as desired.

Sometimes I just get in a rut of making the same type salad over and over and my goal for the summer is to make salads using some of the wonderful fresh vegetables and fruits that are so abundant.  We enjoyed this salad because it was different and it was very easy to make.  I do believe in using the very best balsamic vinegar and olive oil that is available and I am so lucky to have a store locally, The Crushed Olive, where I can purchase good quality products.  They also have a website and here is a link to their website:  http://thecrushedolive.com/

If you have been reading my blog, I have mentioned how rainy our Spring season has been and it is my understanding that the rain has damaged the tomato plants in the area.  I do hope they recuperate because I can’t think of anything I enjoy more than the wonderful fresh tomatoes of summer.
