I love to cook but I have to admit that I don’t get excited about preparing appetizers. If I prepare a meal for guests, I usually serve very simple appetizers and then I was watching Ina Garten one day and she said she usually serves simple appetizers such as chips, nuts and olives. I was so pleased to hear that. I think I have in the back of my mind that if I prepare some really fabulous appetizer, my guests may eat lots of it and not be hungry for the main event or main portion of the meal. I do enjoy a get-together with friends where each person brings an appetizer and we share them. I also enjoy preparing different appetizers and sharing them with my family and friends for a special event. Probably another reason I wouldn’t eat lots of appetizers before a meal is because I enjoy dessert so much and I wouldn’t want to skip dessert.
This past weekend, I have spent time browsing my recipe books. I like to do that from time to time to maybe find some new recipe to try. I have a recipe book entitled, “best kept Secrets of the South’s Best Cooks” and I saw this recipe for Texas Caviar. I have eaten it many times and it is delicious when it is served with the lime flavored tortilla chips. As I read the recipe, I was totally surprised to see that it was submitted by Dan Pastorini, a former Houston Oilers quarterback. So I really think the fact that it is submitted by a Texan and is Texas Caviar this should be a very official recipe. I hope you enjoy it and Happy Monday Everyone!
