Roasted Sweet Pepper Spread

As this is July 4th week, I am still thinking red and saw this recipe that I have used many times.  It is easy to make and will keep in the fridge for up to a week.  I clipped this recipe from a magazine and it was created to feature Keebler Town House Crackers.  I have served it with chips, vegetables and crackers with great results.  I purchase my roasted red peppers at our local Dollar Tree store for $1.00 per jar. The recipe calls for 12 Keebler Town House Crackers but I have found that the recipe is generous enough to serve more people, especially when served as an appetizer with other options.

We are still experiencing our extreme heat here in the South and I liked this as there is absolutely no cooking involved.  Happy Friday Everyone!
