Last week, I was in my backyard and I felt a rush of fresh air. It was different from the heavy humid air we have been experiencing for the last few months. The first thought that came to mind was, “Fall is Coming.
Fall means so many exciting things in the South. Pumpkins, football games, apples, multi-colored leaves and beautiful clear comfortable days and crisp cool nights. My first thought of Fall is Apples and that is my main focus in September. Last Saturday at the Farmer’s Market I purchased my first apples of the season. I started thinking about my favorite Apple Cake recipe. Someone baked this for me years ago for my birthday. Oh did I mention that I was born in the fall so that just makes this time of the year even more special to me.
Here is this favorite Apple Cake Recipe and I hope you enjoy it and the upcoming season of so many wonderful sights and sounds.
1 and 1/2 cups of oil
2 cups sugar
3 cups self rising flour
3 cups of apples that are finely chopped
1 tsp. salt
1 tsp. soda
3 tsp. vanilla
Beat eggs. Add oil and vanilla. Sift dry ingredients and add to oil mixture. Beat well. Stir in apples. Pour into 9 inch layer cake pans and bake at 350 degrees for about 35 minutes or this also works well in a sheet cake pan for approximately 35 minutes.
1/2 cup of sugar
1 cup of brown sugar
1/4 cup half and half
1 tsp. vanilla
Boil all ingredients together for 3 to 5 minutes on low heat. Cool slightly and beat several minutes. pour over cake.
